Amaranth Dosa

This pseudo - cereal is one of the #superfoods that you should definitely include in your daily diet. Not only it is easy to incorporate in your daily routine but super tasty as well.

Ingredients :

  • Amaranth flour (Rajgeera atta) :2 cup

  • Water : 2 Cup (As per requirement)

  • Ginger, paste : 0.5 teaspoon

  • Green chili, silted : 3 pieces

  • Cumin seeds : 0.5 teaspoon

  • Rock salt : As per taste

  • Black pepper powder : 0.5 teaspoon

  • Lemon Juice : 0.5 teaspoon

  • Coriander leaves, finely chopped : 1 tablespoon

  • Ghee : 1 tablespoon

  • Rocket leaves, chopped : 1 cup

  • Pista, Crushed : 0.5 cup

#tip : you can swap the rocket leaves with basil leaves, moringa leaves, coriander leaves, palak, or methi.

#tip : you can swap the amaranth with oats, quinoa, millets, etc.

Method :

  • Take a bowl and add in the amaranth atta, chilli, black pepper, salt, lemon, ginger and coriander - mix well.

  • Next add in the water to the dry ingredients and whisk it properly to turn it into a batter consistency.

  • Now place a tawa on the stove and brush ghee on it surface. Now take a big spoonful of the batter, add it to the tawa and spread it thinly in a circular motion. Cover and let it cook until the bottom side it golden.

  • Now fold it into quarters and set it aside. Repeat the process for the rest of the batter.

  • After that, add the remaining ghee to a kadai - let it heat. add in the pista and roast them.

  • Once you start getting a nice aroma, add in the rocket leaves, sauté it for a couple of minutes. Switch off the flame.

  • Add a couple of spoons of the mixture on top of the dosa and serve hot with pudina chutney.
