Homemade Protein Bars

Most of the clients complain of unbearable hunger pangs - especially in the evening - and this leads them to take whatever junk food they can find around them. Try out this yummy and nutritious on the go snack.
Prep time : 15 mins || Cuisine : American / Fusion || Course : Snacks || Servings : 12

Ingredients :
Peanut butter : 0.75 cup
Dates, deseeded : 0.5 cup
Black raisin : 0.5 cup
Coconut oil : 2 tablespoon
Rolled oats, roasted : 2 cups
Protein powder (vanilla flavor) : 2 tablespoon
Skimmed milk : 2 tablespoon
Pumpkin seed, roasted and lightly crushed : 3 tablespoon
Turmeric powder : 0.25 teaspoon
Cinnamon powder : 0.25 teaspoon
Salt : A couple of pinch
#tip : for protein powder you can choose between whey based powder or plant based vegan protein powder.
#tip : you can swap the pumpkin seed with flax seeds, sesame seed or sunflower seed.
#tip : you can swap the skimmed milk with lactose free milk, almond milk or oats milk.
#tip : you can swap the turmeric powder with saffron.
#tip : you can also add crushed nuts, rice crisps and chopped dry fruits of your choice to it.
Method :
In a food processor, pureed the dates and raisin. and keep aside.
In a medium sized kadai, add the pureed date and raisin mixture, milk, coconut oil and peanut butter. Stir regularly until the items are properly combined and bubbling on the surface. Remove it from heat and add it to a big bowl.
Now add in all the remaining ingredients and mix well. Add a couple of teaspoon milk (extra) if the mixture is too dry
Take a square shaped or rectangle shaped vessel and line it with butter paper or grease it on all sides.
Now transfer the mixture into the vessel, spread evenly and press it firmly to compress the bar into the desired thickness.
Place it in the fridge and let it chill for half an hour or so. Take it out and cut it into the desired shape (cubes / rectangles / triangles) and store it in airtight containers. It can be stored at room temperature for 2 - 4 days or chilled in the fridge for approximately a week.
Pack and take it along with you to office or munch on it at home.
