Jamun Malai Toastie

Jamuns or Java plums are among the most under rated fruits. This sweet and tart fruit - provides immunity, aids digestion, boosts iron levels in the body as well as protect our liver. Though it is generally consumed raw as a juice or fruit itself, adding it to your breads makes it super tasty. Its a favorite among the kids as well.

Ingredients :
Jamun, deseeded : 1 cup
Black Raisin : 0.5 cup
Dates, deseeded : 0.5 cup
Cottage cheese : 1 cup
Whole Wheat Bread : 6 slices
Ghee : 1 teaspoon
Salt : As required
#tip : you can swap the Jamun with apple, pear, pumpkin, mango, etc.
#tip : you can swap the Whole wheat bread with multigrain bread, sour dough bread or gluten free bread (seed bread, almond flour bread, etc.).
#tip : you can swap the cottage cheese with chenna, milk cream, hung curd, shrikhand, feta cheese, paneer or plain tofu
Method :
In a food processor, add in the dates and raisins and make a smooth paste.
In a pan, add in the ghee - heat it and add in the dry fruit paste and stir it until it thickens a little.
Then add in the jamun - mix it well and switch off the gas immediately. Let the mixture cool and divide it into 6 parts.
In a bowl, mash the cottage cheese after adding a pinch of salt. Add water if needed. Divide it into 6 parts and keep aside.
Now toast the bread slices and place them on a plate.
Next on a slice of bread, add a portion of the cottage cheese and spread it evenly. After that add the jamun mix on top. Repeat the process for the other slices as well.
Cut diagonally and serve on a plate.
#tip : If you are using fruits like papaya, mango or banana in place of jamun - skip adding the dry fruits - just slice them up and place it on the bread toast after adding the cottage cheese.
