Dahi Tarka Toast

"TIFFIN TIMES" - are a daily struggle. Be it your kid's lunch box or your snack -figuring out what to pack make is always be a struggle. Especially when it comes to kids, having a variety at hand it is super important to avoid both monotony and boredom. Try out this super quick Indian style sandwich recipe.
Prep time : 15 mins || Cuisine : Indian || Course : Snacks / Tiffin || Servings : 2

Ingredients :
Hung curd : 1 cup
Capsicum, finely chopped : 0.5 cup
Carrots, grated : 0.5 cup
Onion, grated : 0.5 cup
Lettuce, chopped : 1 cup
Chili flakes : 0.5 teaspoon
Multigrain bread : 6 slices
Salt : As per taste
Pepper : As per taste
Water : 1 to 2 teaspoon (if required)
For Tarka :
Ghee : 1 teaspoon
Mustard seeds : 0.5 teaspoon
Curry leaves, chopped : 2 tablespoon
#tip : you can swap the Multigrain bread with seed bread, whole wheat bread, almond flour bread or gluten free bread.
#tip : you can swap the hung curd with greek yoghurt, peanut curd, almond yoghurt or coconut curd .
#tip : you can swap the lettuce with sautéed spinach, moringa leaves, kale, amaranth, etc.
#tip : you can also add microgreens boiled sprouts, sautéed spinach, tomato or finely chopped cucumber, etc. to the curd as well.
Method :
In a kadai, heat the oil and add the mustard seeds and curry leaves. Sauté it for half a minute and set it aside.
In a bowl, mix the curd, capsicum, carrots, onion, lettuce, chili flakes, salt and pepper.
Now add the tarka to the curd mixture and mix well again. Portion it into 3 parts and set it aside
Next, take the bread slices and toast it on a tawa until they are golden brown and set it aside
After that, take a bread slice and add the portioned out dahi tarka on it. Place another slice on it and press it lightly. Repeat the same process for rest of the slices.
Cut the sandwich diagonally and serve immediately with coriander chutney.
