Mango Chia Pudding

Early morning rushes are the most common cause for skipping breakfast. Here is a no mess - no fuss breakfast that is super easy to prepare and even easier to have.
Prep time : 15 mins || Cuisine : Continental || Course : Breakfast / Dessert || Servings : 4

Ingredients :
Ripe mangoes, deseeded and chopped : 2 bowls
Overnight soaked chia seeds : 1 cup
Toasted sunflower seeds : 4 tablespoon
Coconut milk, unsweetened : 2 glasses
Dates, deseeded and chopped : 12 to 15 pieces
#tip : you can swap the chia seeds with oats, basil seeds, puffed rice or chiwra.
#tip : you can swap the coconut milk with skimmed milk, curd, almond milk or soy milk.
#tip : you can swap the mango with any of your seaspnal fuuits, strawberry, raspberry, papaya, banana, kiwi, etc.
Method :
Take half of the mango and one fourth of the coconut milk and blend it into a puree.
Next in a big bowl, take the overnight soaked chia, mango puree, mango chunks rest of the coconut milk and dates and whisk well.
Transfer it into a bowl or glass and top it with a tablespoon of toasted seed before serving.
