At times the same old things do tend to get a little boring - especially of it is the 1st meal that you start your day with. So he is something colourful and different for you to try out.
Prep time : 20 mins || Cuisine : Indian || Course : Breakfast || Servings : 2

Ingredients :
Sooji / Rava : 1 cup
Spinach, chopped : 1.5 cup
tomato, chopped : 1 cup
Green Chillis : 3 piece
Oil / Ghee : 2tsp
Mustard seeds : 1 teaspoon
Cumin seeds (Jeera) : 0.5 tsp
Urad dal : 1 tablespoon
Peanuts : 1 tablespoon
Curry leaves : 1 stalk
Ginger, minced : 1 teaspoon
Capsicum, chopped : 0.5 piece
Salt and Pepper : as per taste
Lemon juice : 2 teaspoon
Coriander leaves, chopped : 2 tablespoon
Water : 2.5 cup
Ghee : 0.5 teaspoon
Method :
In a blender add the spinach, tomato, green chilies and blend it into a paste and set it aside.
In a kadai, roast the sooji in medium flame until golden brown and set aside.
In the same kadai, heat the oil and add the mustard seeds, jeera, urad dal and peanut. Roast it until it is golden.
Now add in the ginger, capsicum and curry leaves and sauté for few more seconds.
After that add the pureed spinach and cook for a couple of minutes until it changes its colour slightly.
Now add in the water and salt and bring it boil. Then add in the roaster sooji and stir continuously to avoid lumps.
Wait for the water to evaporate and then turn off the heat.
Transfer it into a plate, sprinkle lemon juice, coriander leaves and a little ghee and serve hot.
