Tomato Rice ( Tomato Bath / Thakkali Sadam)

This South Indian dish is a great alternative to your regular rice - super quick to make and a easy on your tummy as well.
Prep time : 10 mins || Cuisine : Indian || Course : Lunch / Dinner || Servings : 4

Ingredients :
Brown rice, cooked : 4 cups
Tomato, chopped : 5 pieces
Onion, chopped : 3 pieces
Red chili, chopped : 1 tablespoon
Coriander powder : 1 teaspoon
Turmeric powder : 3 pinch
Garam masala powder : 0.5 teaspoon
Mint leaves, chopped : 3 tablespoon
Ghee : 2 teaspoon
Mustard seeds : 0.5 teaspoons
Salt : As per taste
Pepper : As per taste
#tip : you can swap the brown rice with red rice, black rice, quinoa, amaranth, foxtail millets.
Method :
In a kadai, add the ghee - let it heat. Add mustard seeds, mint leaves, onion & tomato and sauté it until the onions & tomatoes are cooked. Don't forget to mash the tomato and onion with a spoon while it is cooking.
Now add in the masala & red chili and sauté it until you get a nice aroma.
After that, add in the rice and mix well.
Serve hot with raita.
